True life: I LOVE VEGETABLES! (Don't get me wrong, I love a big ole' piece of Emmet's Chocolate Mousse Cake as much as the next person, but veggies are up there too.)
Seriously though, there are not many vegetables I have met that I do not like. My very favorite, though, are mushrooms. Love, Love, Love them! Sadly, Landon and Cory both despise them and swear that I am trying to feed them poison if I sneak them into meals. So when I get the (rare) opportunity to enjoy a meal WITH mushrooms-I take full advantage. Today I threw together a quick and easy lunch, and it turned out VERY yummy, so I thought I would share. :)

Naan Spinach Mushroom "Pizza"
Seriously people-you NEED to try this.
What you need:
Naan bread (I used garlic flavor.)
Olive oil
Shredded cheese
Fresh spinach
Mushrooms (Duh!)
What you do:
1. Preheat oven to 375F
2. In a skillet, heat a little olive oil and sauté handful of fresh spinach and mushrooms until spinach is cooked down. (I prefer fresh mushrooms, but used canned today because that's all I had on hand.) Season with salt and pepper to taste.
3. Spread a little olive oil on naan bread, sprinkle of cheese of choice, and top with spinach/mushrooms.
4. Bake 5-10 min. or until naan is heated and cheese is melted.
5. Serve and eat while binge watching favorite Netflix show.
You can personalize this to whatever your sweet little heart desires-tomatoes, artichokes, bacon, olives...etc. would all be great additions!
